Eggplant (Aubergine) Pancakes

I used Eggplant (Aubergine) a lot in my kitchen. This Eggplant (Aubergine) Pancakes is very easy and tasty vegetarian recipe, also useful in Candida diet.  We love it with fresh vegetable salad.

I used: Eggplant, Buckwheat flour, egg, oil, salt, onion

I chopped half eggplant and  one onion into small pieces with electric mixer. Add one egg and half cup of oil. Stir well and add 300-400 g of Buckwheat flour and one small spoon of Himalaya Salt.

Mix everything together. If it seems to me that the dough is sparse, add more flour. I used baking paper. Spread a little oil on baking sheet and form small pancakes.

I heat my owen to 190°C and wait until my pancakes nicely browned. It takes approx. 15 – 20 min. They taste really great. Usually we eat them with potatoes and fresh vegetable salad.
