Linzer Biscuits

Another very favorite Christmas cookies in our family. Children enjoy preparation of these cookies. They will love to cut a dough and placed on the tray.

I used: 500g flour, 280g butter, 280g sugar, 100g nuts, 2 eggs, half little spoon of baking powder, jam

I mixed the chopped nuts, flour, sugar, butter, eggs and baking powder together. Dough will be better, if we leave it during the night in fridge. So I put it in the plastic bag so that it wouldn’t dry. Next morning me and Mia start with our Linzer biscuits. On a lightly floured surface, roll the 1/2 of the dough into a sheet 3mm thick. With biscuit cutter, cut as many circles from the sheet as you can.

Arrange them on an uncreased baking tray, leaving about 2cm of space between them.Repeat the rolling and cutting process with the other half of the dough, but before placing the second batch on the baking tray, cut out the center of each circle ( I used a lid form pen).

Bake both batches for 10 – 15 minutes or until they are light brown. Cool on cake rack for 20 minutes. Spread tops of the solid circles with a thin coating of jam, lay a cutout biscuit on top of each, pressing the two together so they make a sandwich. Spoon a dab of jam into the opening of each sandwich and sprinkle the tops with icing sugar before serving.

At the end I sieved sugar on top.
